Fakeroos

These are an allergy-free take on Scotcheroos.  I haven't gone to a health food store to find milk free butterscotch chips yet, but I wanted to make an allergy free version of them, so I improvised.  And the result may be better than the original.  I put the chocolate chips into the mix without realizing that they would melt, but they did, and what a happy accident!

Fakeroos

1 cup sugar
1 cup karo syrup
1 cup peanut butter (wowbutter - peanut free)
6 cups rice crispies
1/2 cup mini chocolate chips (enjoy life - milk free)

In a large bowl, stir together sugar, karo syrup, and wowbutter.  Microwave for 1.5 minutes, stir well, then add rice crispies and chocolate chips.  Stir together and spoon into a 9x13" baking dish.

Dirty Rice

This is sort of cheating - I am just using a box mix, but it is a good quick and easy allergy free dinner option.  I like to add corn to it also to make it more healthy.  I just add the corn after it is done cooking.

Dirty Rice

1 box Zatarain's dirty rice mix
1 LB hamburger

Brown hamburger, drain.  Follow box instructions (add water and vegetable oil, bring to a boil, then simmer 25 minutes). 

Apple Cinnamon Raisin Oatmeal

This seems like a weird recipe to post, but since I eat it almost every day, I thought it was worth it.  If it is good enough to eat almost every day for a month, it is good enough to put on the blog.

Apple Cinnamon Raisin Oatmeal

1/2 cup quick cooking oats
dash salt
3/4 cup water
dash cinnamon
1 T brown sugar
1/3 cup raisins
1-2 T apple cider

Mix oats and salt with your fingers so you don't get any salty patches.  Add water and microwave for 1 minute.  Stir in cinnamon, brown sugar, raisins, and apple cider.

Roasted Cauliflower

I found this recipe in one of the many allergy-friendly cookbooks I have been checking out of the library.  It looked great and tasted better!

Roasted Cauliflower

1 head cauliflower - cut into florets
2 T olive oil
1 tsp salt
1/2 tsp pepper
2 cloves garlic - minced
1/4 tsp thyme

In a small prep bowl, mix olive oil, salt, pepper, garlic, and thyme.  Place cauliflower on a large baking sheet with edges.  Drizzle with oil mixture.  Use clean hands to mix until well coated.  Bake at 450° for 20 minutes, turning cauliflower halfway through.

Doubled Recipe

2 head cauliflower - cut into florets
1/4 cup olive oil
2 tsp salt
1 tsp pepper
4 cloves garlic - minced
1/2 tsp thyme

Puppy Chow

I have always loved puppy chow, and if you use Soy peanut butter alternative, it is allergen free!

Puppy Chow

9 cups rice chex
1 cup chocolate chips (enjoy life - milk free)
1/2 cup peanut butter (wowbutter - peanut free)
1/2 stick butter (earth balance buttery stick - milk free)
1 tsp vanilla
1 1/2 cups powdered sugar

In a large bowl melt butter, peanut butter, and chocolate chips.  Stir in vanilla, then chex cereal.  Pour powdered sugar into a clean grocery bag, add cereal.  Mix until well coated.  Place in air tight container.

Beef Roast

I have been making this for a long time, just never bothered to write up a recipe because there isn't much to it.  We recently bought half a cow and the meat from it is so good, this roast tasted like what my gramma used to make - and that is saying something, because I have been building up the taste in my memory for a long time.

Beef Roast

3 lb beef roast
1 envelope onion soup mix
dash oregano
2 cup water

Mix together water, onion soup mix, and oregano in your crockpot.  Add roast and cover.  Cook on low for 8 hours or high for 4 hours.  If you are home, spoon some of the liquid over the roast throughout the day.

**If you wish to cook potatoes with it, add more water and cut up some potatoes and put them in the bottom of the pot, then the roast.

Banana Pancakes

How wonderful to eat something soft and bread-like.  I have been missing that lately.  These pancakes were really good!  This amount makes the pile seen here, about 9 small and thick pancakes.

Banana Pancakes

1 cup pancake mix (betty crocker gluten free - wheat free)
1 1/4 cup milk (almond milk - milk free)
1 tsp vanilla
1/3 large banana or 1/2 small banana

Mash the banana in a mixing bowl with the tines of a fork.  Add pancake mix, almond milk, and vanilla, whisk together until smooth.  Lightly grease a hot griddle.  Spoon batter onto griddle and cook.  Flip when bottom is firm.  Serve with vegan buttery spread and syrup.
