We were craving enchiladas the other day so I looked for a recipe online. I found quite a few that looked good, but went with this one from Betty Crocker because I did not want to stink up the house by frying the shells. I did however add the onion to the beef like Ree's recipe. Another one I found had black beans added, I think that would be great but I did not think my kids would eat them. They were delicious, but needed sour cream to tone down the spice - but that is just me and I think everything is spicy.
Beef Enchiladas
1 LB hamburger
1/2 cup onion - diced
1 can green chiles - drained, diced
2 10 oz can enchilada sauce
10 flour tortilla shells
1 1/2 cup cheddar cheese - shredded
Brown hamburger with onion and chiles. Add 3/4 of a can of enchilada sauce to the meat mixture. Spoon about 1/4 cup of meat mixture onto each tortilla shell, top with some cheese. Roll up tortilla and place in a 9x13" baking dish with the rest of the first can of enchilada sauce on the bottom of the pan. After all shells are filled and placed in the pan, top with remaining can of enchilada sauce and top with remaining cheese. Bake at 375° for 20-25 minutes or until heated through. Serve with tortilla chips and sour cream.

Dirty Rice
This is sort of cheating - I am just using a box mix, but it is a good quick and easy allergy free dinner option. I like to add corn to it also to make it more healthy. I just add the corn after it is done cooking.
Dirty Rice
1 box Zatarain's dirty rice mix
1 LB hamburger
Brown hamburger, drain. Follow box instructions (add water and vegetable oil, bring to a boil, then simmer 25 minutes).

Dorito Taco Bake
I found this one on Plain Chicken, it was pretty good. It seemed more like an appetizer chip dip than a supper dish, but I made it without the crescent roll bottom because my roll of crescent rolls had gone bad, there must have been a hole in the package.
Dorito Taco Bake
1 can refrigerated crescent rolls
1 LB hamburger
1 package taco seasoning (allergy free recipe)
8 oz can tomato sauce
4 oz sour cream
1 1/2 cups shredded cheddar cheese
1 bag doritos - crushed
Brown hamburger and drain fat. Stir in tomato sauce and taco seasoning, simmer for 5 minutes. Unroll crescent rolls and press into the bottom of a 9x13" baking dish. Top with hamburger mixture, then sour cream, then cheese, then doritos. Bake at 350° for 30 minutes.

Tacos with Corn and Black Beans
I love tacos. If it were up to me I would have them at least once a week. This is a variation on just seasoned meat.
Tacos with Corn and Black Beans
1 LB hamburger
1 envelope taco seasoning mix (allergy free recipe)
1 can black beans
1 cup corn
Brown hamburger, drain. Add taco seasoning mix and 3/4 cup water. Rinse and drain black beans, add to meat, add corn. Cook until heated through and water is evaporated.
