Spicy Chicken And Rice (SCAR) or Corn & Black Bean Salsa Chicken

We were having chicken for supper tonight, but none of my usual recipes sounded good.  I googled easy chicken breast recipes and went through 100 on Taste of Home's website.  I came across this one and decided to go with it because it did not have any of Henry's allergens in it.  I changed it a bit because I had thawed a whole bag of chicken breasts and did not think that there would be room in the pan for everything, so I baked it in a 9x13" pan instead.  Leila decided to name it SCAR.  


Spicy Chicken And Rice (SCAR) or Corn & Black Bean Salsa Chicken

1 T chili powder
1 tsp cumin
1 tsp pepper
1/4 tsp salt
1 bag of thawed chicken breasts
1 can black beans - drained
1 can corn - drained
1 cup salsa
4 cups rice - cooked

In a small bowl, mix together spices, then sprinkle on both sides of each breast.  In a glass 9x13" baking dish, mix together corn, black beans, and salsa.  Place chicken breasts on top and bake at 375° for 35 minutes.  Serve with rice.

Salsa Chicken

This was a super easy allergy free recipe that everyone liked!

Salsa Chicken

1 bag chicken
1 jar salsa

Alternate chicken and salsa in a crock pot.  Cook on low for 8 hours.  You can eat the chicken as a main dish or shred it and serve it on tacos.

Doritos Cheesy Chicken Casserole

Another good one from Plain Chicken.  We really liked this one, even the kids! This does not freeze well, I tried it but the chips ended up soggy.

Doritos Cheesy Chicken Casserole

3 cups cooked chicken - chopped
8 oz sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 1/2 cups salsa
1 can of corn - drained
2 cups shredded cheddar
1 bag of nacho cheese doritos

Lightly spray a 9x13" pan with cooking spray.  Crush the entire bag of Doritos and cover the bottom of the dish.  Mix together chicken, sour cream, soups, salsa, corn, and 1 cup cheese.  Spoon over dorito layer.  Top with remaining cheese.  Bake at 350° for 25-30 minutes.

Chicken Tacos

This is a great way to use up leftover chicken.  I like to make a whole chicken in the crockpot and whatever we don't eat in the first meal, I use up by making chicken tacos.

Chicken Tacos

2-3 cups cooked chicken
3/4 cup water
1 envelope taco seasoning mix (allergy free recipe)

Place chicken in a frying pan and top with water.  Add taco seasoning mix and stir to coat.  Cook over high heat until heated through, serve on taco shells with your favorite taco toppings.

Southwestern Chicken Roll Ups

I got started on the Plain Chicken recipe website through Pinterest.  I have found quite a few recipes that I want to try.  This is the first one that I have made.  They were delicious!  It could have used a little bit more of the soup mixture, so the next time I make it I think I will add a small amount of milk (which I included in my version of the recipe).

Southwestern Chicken Roll Ups

2 cups cooked chicken
4 oz cream cheese, softened
1 envelope taco seasoning (allergy free recipe)
1 can cream of chicken soup
1/2 cup salsa
1/2 cup milk
1 cup shredded cheddar cheese, divided
1 can refrigerated crescent rolls

Mix together salsa, milk, 1/2 cup of cheese and cream of chicken soup.  In a separate bowl, mix together the cream cheese, taco seasoning, chicken and remaining 1/2 cup of cheese. Place 2 heaping tablespoons of the chicken mixture on top of each crescent roll and roll up. Place in a 9x13" baking dish.  Pour soup mixture over crescent rolls.  Bake at 375° for 30 minutes.
