These are an allergy-free take on
Scotcheroos. I haven't gone to a health food store to find milk free butterscotch chips yet, but I wanted to make an allergy free version of them, so I improvised. And the result may be better than the original. I put the chocolate chips into the mix without realizing that they would melt, but they did, and what a happy accident!
Fakeroos
1 cup sugar
1 cup karo syrup
1 cup peanut butter (wowbutter - peanut free)
6 cups rice crispies
1/2 cup mini chocolate chips (enjoy life - milk free)
In a large bowl, stir together sugar, karo syrup, and wowbutter. Microwave for 1.5 minutes, stir well, then add rice crispies and chocolate chips. Stir together and spoon into a 9x13" baking dish.
