Blueberry Buckle

This was a staple growing up. If we were having brunch, we were having blueberry buckle. I can't believe that I have never made it until now. 



Blueberry Buckle


2 cup flour

2 tsp baking powder

1/2 tsp salt

1/4 cup shortening

2 cup blueberries

3/4 cup sugar

1 egg

1/2 cup milk


Topping:

1/2 tsp cinnamon

1/2 cup sugar

1/2 stick butter

1/3 cup flour


Mix together dry ingredients. In a separate bowl, beat shortening, gradually adding sugar, egg, and milk. Mix in dry ingredients, then stir in blueberries. Spread into a lightly greased 9x13" baking dish. Beat topping ingredients - should be lumpy. Sprinkle topping over the cake. Bake at 350* for 40-50 minutes.

M&M Pretzel Kisses

These are amazing. Make them today and then give them away or you will eat them all. :)  There are lots of combinations and all are delicious. My favorites are made with the rolos. Recipe is from Bunsen Burner Bakery and the photo is hers as well.


M&M Pretzel Kisses

Pretzels - snaps, circles, mini, or Christmas shapes

Kisses - candy cane, regular, sugar cookie, rolos, or mini peanut butter cups

M&Ms - plain, peanut, or mini


Place pretzels in a single layer on a parchment paper lined baking sheet. Top with kisses and bake at 200F for 5 minutes. Remove from the oven and top with M&Ms while the chocolate is melted. Put in a cool place to set. Store in airtight containers. If you do some mint ones, store those separately, or the mint flavor will spread to the rest.

Grace Oat Bread

 I found this recipe in the Weight Watchers app for 0 points. I changed out some of the oats for oat flour to make it a softer bread consistency. I grind up oatmeal with a coffee bean grinder to make the flour.

Grace Oat Bread

2 1/2 cup oatmeal

1 1/2 cup oat flour

2 tsp baking soda 

3/4 tsp salt

1 egg

1/2 cup applesauce 

2 1/2 cup fat free Greek yogurt 


Mix dry ingredients together, then mix in egg, applesauce, and yogurt. Spoon into lightly greased loaf pan and bake at 350* for 40 minutes.

Ham & Hashbrown Egg Bake

 I made this for a get together with friends. It was very flavorful, I would make it again.


Ham & Hashbrown Egg Bake

20 oz shredded hashbrowns - thawed

16 oz ham - diced

2 cup shredded cheddar

8 egg

1 cup milk

2 tsp garlic powder

2 tsp onion powder

2 tsp salt

dash pepper


In a large mixing bowl, add eggs and milk and mix well. Stir in the seasonings, then add ham, hashbrowns, and cheese. Mix well and pour into a greased 9x13" baking dish. Bake at 350° for 45 minutes or until set. I baked it at 400° for the last 10 minutes to crisp up the top.

Cheese & Bacon Strata

 I made this for an evening with friends. It was delicious, and gone before I remembered to take a picture.


Cheese & Bacon Strata

2 package microwave bacon - cooked

6 eggs

1 1/4 cup milk

1/4 tsp salt

dash pepper

1 1/2 loaves Jimmy John's day old bread - ripped

2 cup shredded cheddar


Microwave the bacon until crispy, cut into small bits into a mixing bowl. Add eggs, milk, salt, and pepper and mix well. Stir in 1 1/2 cups of the cheese, then rip the bread into the bowl and mix well. Let the mixture soak overnight, then spoon into a springform pan and top with remaining 1/2 cup of cheese. Cover and bake at 350° for 25 minutes, then uncover and bake for 20 more minutes.

Bread Maker Cinnamon Rolls

Leila needed to make cinnamon rolls for a school event, so we found a recipe online.  They look and smell amazing, I am sure they will be a hit!


Bread Maker Cinnamon Rolls

Dough:

1 cup warm milk (110° F)

2 eggs, room temperature

1/3 cup butter - melted

4 1/2 cups bread flour

1 tsp salt

1/2 cup sugar

2 1/2 tsp yeast

Filling:

1 cup brown sugar

2 1/2 T cinnamon

1/3 cup butter - softened

Icing:

1/4 cup butter - softened

3 oz cream cheese - softened

1/2 tsp vanilla

1 1/2 cup powdered sugar


Place milk, eggs, butter, flour, salt, sugar, and yeast in the pan of a bread machine. Select the dough cycle, and press Start. Turn out dough onto a lightly floured surface, roll into a 16x21" rectangle.  Mix filling in a bowl and spread over the dough. Roll up the long side of the dough. Cut into 12 rolls and place them in a 9x13" baking dish. Cover and refrigerate overnight. Bake at 350° F for 20-25 minutes. Beat the icing ingredients together until creamy. Frost the cinnamon rolls while they are still warm.
